Turkey Stuffed Cabbage – TypeFree Diabetes

Turkey Stuffed Cabbage

 
Number of Servings: 5


Ingredients

1 head cabbage
1/2 lb lean
ground beef
1/2 lb ground
turkey
1 small onion,
minced
1 slice stale
whole wheat bread, crumbled
1 Tbsp lemon
juice
1/4 C water
1/8 tsp black
pepper
1 can (16 oz)   diced tomatoes
1 small onion,
sliced
1 C water
1 medium carrot, sliced
1 Tbsp lemon
juice
2 Tbsp brown
sugar or Stevia extract or Truvia. Add applesauce for bulk
1 Tbsp cornstarch

Directions

  1. Rinse and core cabbage. Carefully remove 10 outer leaves, place in
    saucepan
    and cover with boiling water. Simmer 5 minutes.
    Remove and drain cooked cabbage leaves on paper toweling.
  2. Shred 1/2 cup of raw cabbage and set aside.
  3. Brown ground beef and turkey and minced onion in skillet. Drain
    fat.
  4. Place cooked and drained meat mixture, bread crumbs, water, and
    pepper
    in mixing bowl.
  5. Drain tomatoes, reserving liquid, and add 1/2 cup tomato juice from
    can to meat mixture.
    Mix well; then place 1/4 cup filling on each parboiled, drained cabbage
    leaf.
    Place folded side down in skillet.
  6. Add tomatoes, sliced onion, water, shredded cabbage, and carrot.
    Cover and simmer about 1 hour (or until cabbage is tender), basting
    occasionally.
  7. Remove cabbage rolls to serving platter, keep warm.
  8. Mix lemon juice, brown sugar, and cornstarch together in small bowl.
    Add to vegetables and liquid in skillet and cook, stirring occasionally,
    until thickened and clear. Serve over cabbage rolls.

Turkey Pita Wedges

Simple and a little bit zesty. Great as a quick and
healthy appetizer
.


Ingredients

  • 2 medium plain or whole wheat pitas
  • 1⁄4 c vegetable oil
  • 1 c cheddar cheese, grated
  • 1 c cooked turkey, chopped
  • 1 medium jalopeno, seeded and finely chopped

Directions

  1. Cut each pita around the outer edges to form 4 rounds in all together.
  2. Brush each round lightly with oil. Cut into quarters.
  3. Place 4 quarters on a paper towel and microwave on high (100% power) for 1 to 1-1/2
    minutes until almost crisp.
  4. Top each quarter with 1 tablespoon of cheese.
  5. Top each with one tablespoon of chopped turkey. Sprinkle each quarter with 1/4 teaspoon
    of jalopeno peppers.
  6. Microwave on high for 30 seconds or until cheese melts. Serve immediately
  7. Please Note: This recipe was tested in a 700-watt oven. Time vary with microwave
    wattage.

Turkey-Olive Appetizers

Scrumptious! Sure to delight the senses!


Ingredients

  • 8 oz cream cheese, softened
  • 1/4 cup oil-packed sun dried tomatoes, drained
    and minced
  • 2 green onions. minced
  • 1/2 lb cracked pepper turkey breast,
    sliced thin
  • 1/2 c parsley
  • 40 decorative toothpicks
  • 40 small
    to medium green pimento stuffed olives

Directions

  1. In a small bowl, blend cream cheese with the sun dried tomatoes and green onions
    until smooth and spread-able.
  2. Lay each cracked pepper turkey breast slice on
    a clean surface and spread with the cream cheese mixture, leaving about 1/2 inch
    un-coated on one end.
  3. Roll the turkey up towards the end free of cream cheese
    and seal.
  4. Dip each roll-up in chopped parsley to coat, then wrap individually
    in plastic wrap and chill until ready to serve.

To serve
Secure each roll-up with 5 toothpicks, marking each piece, and slice in between
the picks at a slight diagonal.
Garnish each piece with an olive.

  2. Add celery, onion and mayonnaise and mix
    well.

Tropical Fruit Compote


Ingredients

  • 3/4 cup water
  • 1/2 cup sugar
  • 2 teaspoons fresh lemon juice
  • 1 piece lemon peel
  • 1/2 teaspoon rum or vanilla extract (optional)
  • 1 pineapple cored and peeled, cut into 8 slices
  • 2 mangos peeled and pitted, cut into 8 pieces
  • 3 bananas peeled, cut into 8 diagonal pieces fresh mint leaves (optional)

Directions

  1. In a saucepan combine 3/4 cup of water with the sugar, lemon juice, and lemon peel
    (and rum or vanilla extract if desired). Bring to a boil, then reduce the heat and
    add the fruit.
  2. Cook at a very low heat for 5 minutes.
  3. Pour the syrup in a cup. Remove the lemon rind and cool the cooked fruit for 2 hours.
  4. To serve the compote, arrange the fruit in a serving dish and pour a few teaspoons
    of syrup over the fruit.
  5. Garnish with mint leaves.
  6. Serve with Homemade Sour Cream

Yield: 8 servings

Many researchers believe that practicing yoga regularly can help to stimulate blood circulation and massage internal organs, which can provide long-lasting physical benefits to individuals suffering from diabetes.

Additionally, exercise (including yoga) can have long-term benefits for diabetics. Physical exercise has been proven to reduce stress, decrease body fat, stimulate organ functions and blood circulation, and decrease blood sugar levels.

Yoga and other forms of exercise have been shown to have a positive impact on every type of diabetes, including Type 1 and Type 2 diabetes.

3 Yoga Postures

Yoga is an ancient practice of bending, stretching, and challenging the body to hold certain postures for a prolonged period of time. There are several different types of yoga, including Bikram (hot yoga), Hatha yoga (body balancing), and Ashtanga(rigorous) yoga. Each type of yoga provides different benefits and postures. However, all yoga styles are similar in that they massage the organs, develop muscles, and increase blood flow and oxygen levels throughout the body.

Yoga has clear physical and mental benefits for Diabetics. Some yogis (yoga teachers) even believe that practicing yoga regularly can reverse many Diabetic symptoms, including increased hunger, weight gain, poor circulation, and stress.

There are some easy-to-practice yoga postures that are especially beneficial to Diabetics. These postures massage the pancreas and glands, which help to regulate blood sugar levels. They also help to stretch the abdomen and spine. If you have just a few minutes a day to dedicate to yoga practice, check out these postures:

Yoga Pose Half Moon ¥ Half-moon Ð stand with your feet touching at the heels and toes. Reach your arms over your head sideways and link fingers. Extend the index finger of each hand, as if pointing to the ceiling. Slowly bend towards one side of the room from your belly button to the tips of your fingers. As you deepen the bend, push your hips in the opposite direction of the bend. Be sure to keep your arms and legs straight while pushing your fingers and heels in opposite directions.

¥ Cobra Ð lay on the floor, belly-down. Place the palms of your hands flat on the floor underneath your shoulders. Make sure your arms are parallel from the shoulder to the elbow and elbow to the wrists. Look to the ceiling, stretching your eyes and head upward. Slowly lift your torso off of the ground so that it meets the ground at your belly button. Remember to breathe deeply in this pose to strengthen and lengthen the spine and torso.

Yoga Pose Bow

¥ Bow Ð with your belly on the floor and eyes stretched towards the ceiling, reach both arms out to your sides. Bend your legs at the knees towards the ceiling and reach down to grab your heals from the outside of your legs. Push your legs towards the ceiling, lifting your torso as well. Rock towards your chest as much as possible. Try to hold this pose as long as you can.
